I've never used the Pi Zero, but I have been using the older A/B/B+ Pi's since they came out. A few years ago I worked with a friend to make a point-of-sale machine with a Pi and a touchscreen to activate SIM cards for mobile phones using a GSM modem card, so I have realistic expectations of the Pi!
I'm going to set it up "headless" and SSH into the device rather than using a keyboard etc mainly because having googled about it seems simple enough and I don't have a wireless keyboard/mouse as you described. The Pi Zero was a starter kit from Pimoroni and came with a power supply and a USB dongle + HDMI adapter so that remains an option if I get stuck.
