I asked the question decades ago and was told that piezo crystals were not sufficiently durable. They are fine for lighting a gas flame, but even at a few times a day in an appliance that lasts 10 years, that is only 10,000 operations.
For ignition in an engine, many millions of operations would be needed rather than a few thousand.
